Real ales have been an obvious beneficiary over recent years but, increasingly, customers are demanding beers with heritage and an exceptional drinking experience and tastes to match. So when cask ales don't hit the mark, it's time to set your sights on two draught Trappist beers from Belgium.
Just seven Trappist monasteries brew beer to this day, with Chimay and Westmalle arguably the most recognisable and both now offering two of their superb beers on draught in the UK.
Both Westmalle Dubbel and Chimay White are 'living beers', with fermentation continuing in the keg and flavours which will develop depending upon age, serving method and serving temperature.
Like all Trappist beers, Chimay White and Westmalle Dubbel are best enjoyed when served in their appropriate 'chalice' glasses, both to accentuate the flavour and deliver a real drinking experience.
Like all true Trappist beers, Chimay and Westmalle are brewed within the walls of the abbey or under close control of the monks.
The economic purpose of Trappist breweries is not for financial gain, but to support the monastery and their benevolent work.
Trappist Dubbels, such as Westmalle, have strong dark flavours such as chocolate, toffee, plum and caramel which work well with beef, lamb, duck and also with game and strongly flavoured sausages. Chimay White will work well with lighter meats such as hams and particularly chicken, especially when enhanced with bolder, spicier flavours. It will also match well with basil-based sauces such as pesto as well as most fish.
