The Birra Menabrea brewery is run by Franco Thedy the fifth generation descendent of the original founders who, to this day, still make use of clear Alpine water in the production of its beers. Menabrea is brewed using a natural 'slow fermentation' process. The beer is then matured underground for a further month in cellars that were hewn out of the rock beneath the brewery when it was established in 1846.

This has been recognised through numerous awards since 1882 including consecutive Gold Medals at the Chicago International Beer Championships, seeing off notable competitors including Grolsch and Heineken.
