Our Edinburgh based account manager Joe is truly obsessed by lambic and has twice teamed up with noted local restaurant Edinburgh Food Studio to explore how this incredible beer category can be used to partner food. These events run as a series of dinners across three nights, and the restaurant team build a bespoke menu around the chosen beers, often including rarities from our partners in Belgium.

This approach has lead to some fascinating results, using ingredients and flavours in the beers to replace some of those typically found in dishes, or using the inherent acidity and funkiness of lambic to pull out more nuanced flavours from the food.
