400 g of wild cherries per litre are fermented together with a strong Lambic of spontaneous fermentation and aged on 6,200 litre oak foeders (large wooden casks) for 6 to 8 months. After a maturation of 6 months in the bottle it is ready for tasting but has a high ageing potential. Aromas has tart cherry notes with some mild lambic funk, winy, well supported by its alcohol content. Taste is dominated by loads of fresh tart cherry notes with some mild barnyard and some vanilla notes, balanced against a backdrop of musky roasted oak.

A meeting with American importer Charles Finkel in the 1970s revolutionised the fruit beer segment. Charles convinced Lindemans to export their old kriek to the United States by boat. What they had not thought of is that the movement of the waves would reactivate the fermentation process and cause the corks to pop during the trip. To prevent that from happening,they developed an alternative production method for their kriek. LIndemans use fresh, not from concentrate, unsweetened cherry filtrate which they blend with lambic that is at least one year old before fermenting & macerating for up to 3 days and pasteurising the whole batch.�

Straffe Hendrik Quadrupel, launched in 2010, is an intense beer, dark in colour and full in taste. The aroma is elegant, spicy and slightly roasted. Straffe Hendrik is a Bitter Tripel Ale of 9% abv. The beer was originally from Bruges and brewed in Bruges by brewery De Halve Maan. In 1981, Henri Maes and his daughter V�ronique followed the demand of the mayor and created a strong blond beer for the inauguration of the statue of Sint-Arnoldus, the saint of all beer-brewers. However, the beer became so popular, that the demand for the beer continued. It was given the name of Straffe Hendrik (Strong Hendrick), since it was a rich and strong beer.

OUDE Gueuze

Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze's special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.
